đź””Regulatory Update | FSSAI Advisory on the Use of Food-Grade and Corrosion-Resistant Cutting Equipment

Food Safety and Standards Authority of India (FSSAI) has issued an important advisory directing all Food Business Operators (FBOs) to ensure the use of only food-grade, non-toxic, and corrosion-resistant knives, blades and other cutting equipment during food handling and processing operations.


The advisory highlights that the use of rusted, corroded, chipped, painted, cracked, damaged or inadequately cleaned cutting tools can result in physical, chemical and microbiological contamination, thereby compromising food safety and consumer health.



📌Key Compliance Requirements for Food Businesses:


Use only food-grade and corrosion-resistant cutting equipment in all food handling and processing activities.


Ensure all knives, blades and cutting tools are maintained in a sound and hygienic condition.


Conduct regular inspection and preventive maintenance to identify signs of rust, corrosion, chipping, cracks or breakage.


Immediately remove and replace any damaged or unsuitable equipment that could post a contamination risk


Establish and document appropriate cleaning, sanitization and sterilization procedures at prescribed intervals.
